Green Tomatoes – approximately 1 per person
Eggs – approximately 1 to 2 eggs per tomato
Flour – to coat tomatoes
Salt – to taste (optional)
Pepper – to taste (optional)
Crackers – finely crumbled – for extra crispy
Cooking Oil
Slice Green Tomatoes to 1/2″ or desired thickness. In one bowl beat eggs. In second plate place flour, salt, pepper. With tongs or fork dip tomato into egg, then dip into flour mixture. (For extra crispy dip tomato back into the egg and then cover both sides with finely crumbled crackers).
Cover bottom of skillet with cooking oil and heat till it sizzles when you drop a piece of batter from tomato in. Fry tomatoes untill golden brown on both sides.
